Breezy Lemon Slice

I have included two recipes one using Summer Breeze biscuits & the other uses plain gluten free biscuits. I have made the recipe to fit into a slice tray (~18 cm X 28 cm) and to be a thicker base than most lemon slice recipes - I love the base.

Ingredients

Base

500 g Summer Breeze biscuits

1 tin Condensed milk

250 g Butter

50 g Dessicated coconut

Icing

250 g Icing sugar

Zest of 1 lemon

25 g Lemon juice (~1/2 lemon)

50 g Butter (melted)

Method

Line a slice tray with non-stick paper, ensure the paper overlaps the edges of the tray.

Thermomix

Put biscuits into TM bowl - 5 secs at speed 8.

Transfer to a bowl.

Pour the condensed milk into the TM bowl & add the butter.

Mix @ 50 C for 3 mins at speed 1.

Add in biscuit crumbs & mix for 30 secs at speed 3.

Add in coconut & mix for 20 secs at speed 3.

Transfer mix to the slice tray, smooth & refrigerate.

Food Processor

Process biscuits to crumbs. Transfer to a mixing bowl.

Melt butter in a microwaveable dish.

Pour melted butter, condensed milk & coconut onto biscuit crumbs.

Mix & transfer to the slice tray, smooth & refrigerate.

Icing

Sift icing sugar into a mixing bowl.

Add in zest, lemon juice & melted butter.

Mix well & pour on the top of the slice.

Refrigerate until set.

Cut the slice into squares & store in the fridge. Layer with non-stick paper.

2 Kaffir lime leaves (finely chopped)

Zest of 1 lemon

40 g Lemon juice

1 tin Condensed milk

250 g Butter

100 g Dessicated coconut

Icing

250 g Icing sugar

Zest of 1 lemon

25 g Lemon juice (~1/2 lemon)

50 g Butter (melted)

* The biscuits need to be nice tasting to start with - gritty biscuits will make a gritty slice.
