Grain Free - Breezy Lemon Slice
Ingredients
Base
325 g Bakers' Magic Grain free flour
2 Kaffir lime leaves (finely chopped)
Zest of 2 lemons
100 g Lemon juice
1 tin Coconut cream ( I use Ayam premium)
200 g Coconut oil
100 g Dessicated coconut
400 g Caster sugar
1/2 tsp Salt
Icing
250 g Icing sugar
Zest of 1 lemon
25 g Lemon juice (~1/2 lemon)
50 g Coconut oil (melted)
Method
Line a slice tray with non-stick paper, ensure the paper overlaps the edges of the tray.
Thermomix
Put the Bakers' Magic Grain free flour, salt & Kaffir lime leaves into TM bowl - 5 secs at speed 8. Transfer to a bowl.
Food Processor
Process Kaffir lime leaves to crumbs. Transfer to a mixing bowl containing the grain free blend & salt.
Both
Pour the coconut cream into a medium saucepan & add in the sugar. The mix will expand ~3x the volume when it is boiled.
Put saucepan on a low heat & stir to dissolve the sugar. Increase the heat & boil for 5 minutes. Reduce the heat.
Add in the coconut oil. If the oil is solid wait until it has melted before putting in the grain free blend.
Add the Bakers' Magic Grain free flour/kaffir lime leaves & stir to combine.
Take the saucepan off the heat and mix in the coconut.
Transfer mix to the slice tray, smooth & refrigerate.
Icing
Sift icing sugar into a mixing bowl.
Add in zest, lemon juice & oil.
Mix well & pour on the top of the slice.
Refrigerate until set.
Cut the slice into small squares & store in the fridge. Layer with non-stick paper.
