Waffles

 

According to my son "Waffles are like pancakes with a syrup trap". He is entitled to his opinion but I think they are better than pancakes - the crisp outside, the beautiful soft middle & of course the little syrup traps - quite simply they are delicious.

To make these you will need to use a waffle iron/maker.

This recipe was designed specifically to be made with Bakers' Magic gluten free flour. The finished baked product will not be the same if you use another gluten free flour and you will need to adjust the recipe, particularly if the flour you're using contains rice flour. 

Ingredients

100 g Bakers' Magic Gluten free flour

50 g Maize starch

1 tsp Baking powder

~1/4 tsp Salt

2 tsp Vanilla essence (optional)

1 Egg

50 g Butter (melted)

250 g Milk (full fat)

Optional 1 tsp Sugar - I didn't put it in 

 

Method

Turn on the waffle iron/maker. We have a Breville Crisp Control waffle iron & we use it on the hottest setting. 

In a bowl mix together the dry ingredients.

Melt the butter in another bowl.

Add the egg, vanilla essence & milk to the melted butter & whisk (a fork is fine) to combine.

Add the wet ingredients to the dry ingredients & stir to combine.

Use a stab blender to make the waffle batter smoother.

Pour/spoon some of the batter onto the waffle iron hot plate and spread the batter out to the sides. The batter will thicken on standing.

Put the lid down and wait until the waffle is cooked. I had to cook each waffle for ~5 mins, they weren't ready when the little "ready" light came on. To test your waffle iron use a little bit of batter in one of the segments first. 

When the waffle is ready, take it out & top with your favourite toppings.
