Fudgy Choc Walnut Slice

Our family was staying at a friends farm during the winter school holidays. It was freezing outside & lambing was in full swing. More often than not the children would come inside wet, cold, looking for a hot chocolate & a bite to eat. It just so happened that a wonderful person brought with them a divine chocolate slice that they had bought at a cafe/caterers in Kooyong. It was really good, really good - the slice didn't last long it was that good. As I was eating it I wondered whether I could make it gluten free. The following recipe is my gluten free version.   

Ingredients

Base

250 g Butter 

125 g Brown sugar

125 g Caster sugar 

50 g Cocoa

160 g Walnut pieces

50 g Coconut flour

2 Eggs

Dairy free version - substitute with 210 g Coconut oil + 40 g water + pinch of salt.

Sugar - I tried dark & light muscovado with no caster sugar however my children prefer the brown sugar + caster sugar combo. I haven't tried any of the unrefined sugars but I think coconut palm sugar would work well in this recipe.  

Cocoa - I have made the slice with only 40 g of cocoa however the resulting slice is much softer (still yummy).

Walnuts - I am sure that another nut could be substituted. I would love to try a peanut/peanut butter version or macadamia or... 

Coconut flour - I have tried adding 100 g of coconut flour but I prefer the slice when 50 g is used. There are so many different brands of coconut flour & some are better than others. I use Bob's Red Mill organic coconut flour.  Sunnybrook health & healing store stock a number of coconut flours & they ship worldwide.  

Eggs - the eggs in this recipe are used as an emulsifier preventing the fat in the butter/coconut oil from separating. I haven't tried making the slice with an egg replacer. 

Icing

30 g Cocoa (sifted)

50 g Hot water

125 g Butter

250 g Icing sugar (sifted)

 

Method

Base

Line a slice pan (26 cm x 16.5 cm or 20 cm x 20 cm) with non stick paper.

In a saucepan melt the butter on low heat.

Remove from the heat & add in the sugar & cocoa.

Stir to combine.

Add in the eggs & stir to combine.

While stirring heat until the mixture just starts to boil.

Take the saucepan off the heat & stir in the coconut flour. 

Add in the walnuts. 

Pour into the slice pan. 

Cool the slice before icing it. 

Icing 

Melt the butter, add the water & stir in the cocoa & icing sugar.

Pour the icing on top of the slice.

Store the slice in the fridge or freezer. Cut little pieces to serve (you will need to peel it off the paper).
