Everyone that has tasted my Amazing Chocolate Cake loves it, given that I have a Gluten free & Dairy free baking class coming up I thought I would make a dairy free version of this wonderfully moist cake. A nephew's birthday seemed like a good time to get some feedback. BTW before they ate it I didn't tell them 1) that it was gluten free, 2) that it was dairy free :). Did they like it? I don't know Jan - Jan is Linda's mum. Linda used to love eating her mum's Christmas cake but like so many of you once you realise you can't eat wheat those special treats are off limits. Linda entered one of my Facebook competitions with this comment on what she would bake if she won some Bakers' Magic gluten free flour.

Linda didn't win any flour (this time) but here is my version of her mum's fruitcake

As a family we really don't eat Fruit Mince Tarts at Christmas time, shortbreads, fruitcake - Yes - fruit mince tarts - No. Apparently a lot of people do eat them (who knew!) & fruit mince tarts was a popular Christmas recipe request on my recent Facebook give-away competition. One person even describing the brown sugar short pastry that she oh so missed. It was obvious to me that I had to make, bake & taste some (& use brown sugar in the pastry).

Honestly I bit into one of these tarts & my first thought was 'Oh my'. With a big smile on my face I told the rest of the family 'I don't like fruit mince tarts (I find them simply too sweet) but these are wonderful'.

There was a bit of resignation on my husband's face knowing that although he doesn't like fruit mince tarts he was going to have to try them. His response after taking a bite 'Oh my'. 

A couple of weeks ago (November 2017) I ran a competition on Facebook & the prize was some Bakers' Magic gluten free flour. To enter the comp all you needed to do was comment on what Christmas goodies you would like to make with the flour. Gingerbreadfruitcakepanettoneplum pudding were all listed by competitors as well as these delicious Brandy Snaps.

I hope you enjoy my Panettone Inspired Bread as much as my family did. They also loved my Panettone Bread & Butter Pudding. Enjoy!

Pfeffernuse

There are some times in the year when tradition takes hold & there is an expectation from the extended family that the goodies that grace your table year after year will continue to be there. To continue doing that sometimes those well loved recipes need to be converted to gluten free - that is something I love doing. The following is my gluten free version of a Pfeffernuse (Peppernut) recipe sent in by Skye - thank you so much for sharing. I've included the original recipe.
