GF Toasted Muesli

This recipe is for a friend who wanted another option for breakfast. Lindy, I hope you like it.

 

Ingredients

300 g Buckwheat flakes*

50 g Puffed millet*

50 g Puffed quinoa*

100 g Shredded coconut

30 g Chia bran*

25 g Slivered almonds

25 g Macadamias

35 g Pepitas

15 g Sunflower kernels

15 g Sesame seeds

30 g Freeze dried pomegranate seeds

30 g Cranberries

50 g Dried dates

80 g Maple syrup or 60 g Honey + 20 g Water

40 g Oil

Buckwheat flakes - Sunnybrook - Gluten Free and Allergy Friendly Store sell Buckwheat flakes & they have an online store. There are a couple of different brands available, I used Big Oz organic Buckwheat flakes (rolled wholegrain cereal). They also stock puffed quinoa, puffed millet & chia bran.

Substitute in your favourite nuts. Adding more than 115 g of nuts to the muesli will increase the overall fat content.

Substitute in your favourite dried fruit. Adding more than 110 g of dried fruit will increase the overall sugar content of the muesli.

Is the muesli sweet enough? I like the muesli as is, my daughter would like it to be a little sweeter. If you want it to be sweeter add in more maple syrup or honey. Do you want to substitute in solid sugar? 80 g of maple syrup contains ~60 g of carbohydrate so use 60 g of the solid sugar & dissolve it in ~20 g of hot water.

The nutritional information of the individual ingredients was either sourced from FSANZ or from the specific products.

Method

Preheat oven to 130 C.

Line 2 baking dishes with baking paper.

In a big bowl mix together the buckwheat flakes, puffs, coconut & bran.

Stir in the nuts.

In a small container "mix together" the maple syrup & oil (or other sweetener mix).  

Pour the wet ingredients onto the dry ingredients & stir to combine. Continue to stir until the mix appears to be evenly coated.  

Bake in the oven for ~30 - 40 mins or until golden. Stir the mix every 5 mins.

Bring out of the oven & allow to cool before stirring in the dried fruit.

Store in an airtight container.

This muesli mix will make ~800 g or ~20 serves.
